Heath Holloman has been cooking in Raleigh for over 20 years. After spending time in France working at the Michelin Starred restaurant L’Essential in Chamberey, Heath returned to Raleigh and opened Bistro 607 on Glenwood South and during a 12 year span at Bistro 607, Heath created some of the most loved French food in Raleigh, earning a long list of loyal regulars that still follow him today. Now, with Globe Heath continues to prepare food at the highest level, continuing the tradition that has made his restaurants so popular in Downtown Raleigh.

Gray Modlin began his career at Bistro 607. He trained in New York City, working at Montrachet in Tribeca and studying at The French Culinary Institute in Manhattan. He also spent a year working at Michelin Starred Au Plaisir Gourmand in Chinon, France for Chef Jean Claude Rigollet where he developed a strong foundation in Classical French Cuisine.  After returning from France and working at the Fearrington House, Gray partnered with Heath and Henry to open Globe.

Henry Burgess began his career at the Cardinal Club, a Raleigh institution and started at Bistro 607 in 2000. He quickly took over the front of the house and the wine list creating one of the most comprehensive and value oriented French Wine lists in the Triangle. At Globe Henry has continued to build his own reputation as one of the most knowledgeable wine experts in Raleigh, continually seeking out the exceptional examples of wines from around the world.

With over 40 years of combined restaurant experience Heath, Henry and Gray have created an inviting and intimate atmosphere where they serve creative and expertly prepared food inspired by cuisines from around the world.
